Overnight Chia Seed Pudding

Sick of eggs and looking for a high-protein, meatless breakfast? Look no further. Chia seed pudding is so full of nutrients and healthy fats to keep you full and functioning.

Chia seeds are considered a “superfood,” and who really knows what that means? However, I do know that chia seeds are high in protein, fiber, and omega-3 fatty acids and somehow those tiny little seeds magically form a pudding-like treat when mixed with liquid.

[[Side note: Honestly, the term “superfood” drives me crazy. I think it is misleading and a term used by media to sell certain health food products. I ALWAYS recommend you do your own research using reputable resources to come to your own conclusions about what to include/exclude from your diet.]]

Alone chia seeds don’t have much taste, but the beauty of these magic beans is that they’re a blank canvas. I love to create different flavors, especially for meal prep to keep things interesting. My favorites are peaches & cream, cinnamon apple, and cacao & almond butter!

But you can get creative. Try adding flax seeds, pumpkin seeds, almonds, pecans, different fruits, nut butters, avocado, different spices (pumpkin spice, vanilla extra, etc.), dried coconut… anything you want!

You’ll find different liquid-to-chia seed ratios out there, but I like mine a little thick so I find this ratio works best for me. Also, I use full-fat coconut milk which may contribute to the thickness. You could also use almond milk but you you’ll have to experiment with the ratios.

You can make this Whole30 by omitting the honey and vanilla extract, but this would technically be considered SWYPO so proceed with caution.

Ingredients

Chia Seed Pudding

  • 3/4 cup liquid (half full-fat coconut milk, half water)
  • 2 tbsp chia seeds
  • 1 scoop collagen powder
  • 1 tsp honey
  • pinch salt

Cacao & Almond Butter

  • 1 tbsp almond butter
  • 1 tbsp cacao nibs
  • 1 tbsp cacao powder

Cinnamon Apple

  • 1/4 cup diced apple
  • 1 tsp cinnamon

Peaches & Cream

  • 1/4 cup diced peaches
  • 1/2 tsp vanilla extract

Instructions

  • Combine the liquid, chia seeds, honey, and salt in a small jar. Close the lid and shake vigorously. 
  • Add desired toppings and stir to incorporate.
  • Refrigerate overnight (or at least 3-5 hours). 
  • Enjoy!
